Crab Meat Avocado

Prep Time:  15  minutes   |    Total Time:  15 minutes   |    Servings:  6

Ingredients:

  • 2 cloves garlic, minced
  • 1 teaspoon  Burman’s  Dijon Mustard
  • 1 lemon, zested and juiced
  • ½ teaspoon  Stonemill  Iodized Salt
  • ½ teaspoon  Stonemill  Ground Black Pepper
  • ½ cup  Carlini  Extra Virgin Olive Oil
  • ½ red pepper, diced
  • ½ yellow pepper, diced
  • ½ red onion, diced
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, sliced
  • 2 8-ounce packages Fremont Fish Market  Flake Style Imitation Crab Meat
  • 3 avocados, halved and pitted

Directions:

  1. In a medium bowl, whisk together garlic, mustard, lemon zest, lemon juice, salt and pepper.   
  2. Slowly drizzle in oil until emulsified.
  3. Add remaining ingredients except avocado and toss to combine.
  4. Divide evenly among avocado halves and serve.
